Spring Confetti Crockpot Candy

  • 32 ounces unsalted or lightly salted cashews
  • 24 ounces vanilla/white almond bark
  • 3 cups mini marshmallows
  • 1 cup pastel m&m candies, plus more for topping
  • optional: pastel sprinkles, pastel melted chocolate

Directions:

  1. Add cashews to crockpot, top with broken up almond bark. Cover and cook on high for 1 hour.
  2. Uncover, stir until chocolate is completely melted and smooth. Stir in marshmallows and m&m candies.
  3. Use a cookie scoop or tablespoon to scoop candy mixture onto a wax or parchment paper-lined plate or small baking sheet.
  4. Top each candy mound with 2 m&m candies, drizzle with melted chocolate, and top with sprinkles. Place in fridge for 2-3 minutes until hardened. Serve immediately or store in airtight container at room temperature for up to 2 weeks.

Easter Egg Cookie Dough Truffles

Ingredients:

  • 1/2 cup of butter room temperature
  • 3/4 cup packed brown sugar
  • 2 cups all-purpose flour
  • 2 tsp vanilla extract
  • 14 oz sweetened condensed milk
  • 1 cup mini chocolate chips
  • pink, blue, purple, and white candy melts

Directions:

  1. In the bowl of a large stand mixer, cream the butter and the brown sugar until light and fluffy, about two minutes. Beat in the vanilla.
  2. Slowly add the flour, scraping down the sides as necessary.
  3. With the mixer still running, slowly add in the sweetened condensed milk. You may need to stop the mixer periodically to scrape down the sides.
  4. Once it is fully combined, stir in the chocolate chips.
  5. Form the dough into one inch balls, and then shape into eggs. Place on a wax paper lined pan and cover loosely with plastic wrap. Refrigerate overnight.
  6. Melt the candy melts according to the directions on the bag. Keeping the truffles in the refrigerator, and removing only three or four at a time, dip them in the candy melts one at a time with a fork. Gently tap off any excess chocolate and let dry on wax paper.

Pretzel Bunnies and Ducks

Ingredients:

Now for the pretzel bunnies.  You’ll need:

  • yellow Meckens chocolate
  • pretzels
  • orange decorating gel
  • black decorating gel

Now for the pretzel bunnies.  You’ll need:

  • pretzels
  • white Merckens chocolate
  • black decorating gel
  • pink decorating gel

Directions:

Ducks:

  1. Melt the chocolate
  2. Start by dropping a small amount of yellow chocolate onto the pretzel:
  3. Add a small dot of the black decorating gel for the eye:
  4. I tried using an orange M&M for the beak but it just didn’t work for me. So instead, use the orange decorating gel to draw a beak over the top little jut out of the pretzel.

Bunnies:

  1. melt a small amount of the chocolate in the microwave for 2 minutes at a time at super low power
  2. Add a small amount of chocolate to the inside of the pretzels.
  3. draw the ears and nose in pink, and draw the eyes and whiskers in black and DONE!
