Luxury Cookies

After Valentine’s Day before we all start coming out of our winter hibernation, we all deserve some last rich luxurious cookies! So let’s get our last lazy days in with these 3 extravagant cookies.


Inside out Red Velvet cookies


For cream cheese filling
1 oz. (8-oz.) block cream cheese, softened
1/2 c. powdered sugar
Pinch of kosher salt

For cookie dough

1/2 c. (1 stick) butter softened
1/2 c. granulated sugar
1/4 c. packed brown sugar
1 large egg
1 tsp. pure vanilla extract
1 1/4 all-purpose flour
1/4 c. unsweetened cocoa powder
1/2 tsp. baking powder
1 tbsp. red food coloring


  1. Preheat oven to 350° and line a large baking sheet with parchment paper. Make cheesecake filling: Combine cream cheese, powdered sugar, and salt in a small bowl. Mix well until mixture is smooth. Cover with plastic wrap and refrigerate until slightly firm, about 30 minutes.
  2. Make the cookie dough: In a large bowl using a hand mixer, cream butter, and sugars until light and fluffy. Beat in egg and vanilla. Add flour, cocoa powder, baking powder, food coloring, and salt. Mix until just combined.
  3. Make cookies: Scoop a heaping tablespoon of the cookie dough and flatten into a pancake-like circle on the baking sheet. Place about 2 teaspoons of cream cheese filling on top. Bring the edges of the dough around the filling and pinch the edges together to seal, adding more dough if necessary to cover completely, then roll the filled dough into a ball. Space cookies about 3″ apart on prepared baking sheet.
  4. Bake cookies 15 to 17 minutes. Let cool slightly before serving.

Cinnamon Roll Cookies


3 c. all-purpose flour, plus more for surface
1 tsp. baking powder
1 tsp. kosher salt
1 c. (2 sticks) butter, softened
1 c. granulated sugar
1 large egg
1 tbsp. milk
1 tsp. pure vanilla extract

For filling

2 tbsp. melted butter
1/4 c. packed brown sugar
2 tsp. ground cinnamon

For glaze
1 1/4 c. powdered sugar
2 tbsp. milk


  1. Heat oven to 350° and line two baking sheets with parchment paper. In a large bowl, whisk together flour, baking powder, and salt.
  2. In a large bowl using a hand mixer (or in the bowl of a stand mixer), beat butter and sugar until fluffy and pale in color. Add egg, milk, and vanilla and beat until combined, then add flour mixture gradually until totally combined. Divide dough in half.
  3. On a floured surface, roll each piece of dough into a 9″-x-10″ rectangle, about 1/4″ thick.
  4. In a small bowl, combine brown sugar and cinnamon. Brush rectangles with melted butter and sprinkle with sugar mixture. Tightly roll up each rectangle into a tight log.
  5. Slice into ½”-thick slices and transfer to prepared baking sheets, spaced 1″ apart. Bake until lightly golden, 12 to 14 minutes. Let cool on sheets for 5 minutes.
  6. In a small bowl, combine powdered sugar with milk and drizzle over cookies.

Oreo-Cookie Butter Bites


1 c. cookie butter
1 large egg
1 medium banana, mashed
1/2 tsp. baking soda
1 c. all-purpose flour
1/3 c. Oreos, crushed, plus more for topping


  1. Preheat oven to 350°.
  2. In a large mixing bowl, combine cookie butter, egg, banana, baking soda, and flour, mixing until combined. Fold in crushed Oreos.
  3. Use a melon baller to scoop 1/2″-sized balls (or form them with your hands). Place each one about an inch apart on a parchment-lined baking sheet and bake for 8 to 9 minutes. Top with more Oreo crumbles.
